What is Chorizo?

The word “chorizo” refers to a variety of sausages, both fresh and cured, originating in Spain and Latin America. Generally chorizo can be categorized as Mexican or Spanish Chorizo.

Apco Chorizo Especial is Mexican chorizo made from ground pork and seasoned with vinegar, garlic, and spices. Paprika gives it a deep orange/red color and a spicy kick. Mexican chorizo is fresh and must be removed from its casings and cooked thoroughly to 160 degrees. It can be found in most HEB grocery stores with other breakfast sausages. It can be used in place of ground meat or sausage in tacos, burgers, burritos, eggs and chili.

Spanish Chorizo

Spanish Chorizo is cured and smoked or dried. It is similar to pepperoni and is sold with cured meats. It can be sliced for a sandwich or chopped for a recipe.

  1. I’m from San Antonio and I work in Ft Worth.
    I haven’t gone home for a month abd I am dying for some Apco Chorty chorizo.
    Is there a store here in Ft Worth that I can buy it ???
    You can fed ex it if you can…. about 10 pounds :)
